Black Bean & Corn Salsa

Let me introduce you to my favorite summertime snack.

Black Bean & Corn Salsa

1 can black beans (rinsed and drained)
1 can of sweet corn (rinsed and drained)
1/2 cup of pace picante salsa
1 avocado (cut into small pieces)
1 small bundle of cilantro (rinsed and chopped)
1 medium sized tomato ( cut into small pieces)
1 small red onion (chopped)
1 lime (or two...I love lime juice!)
1 tsp granulated sugar
1 tsp kosher salt

This has been fresh and on hand in our icebox all summer. It is perfect as a dip, side for a meal, topping for freshly grilled meat, chicken and fish. Or if you are like my two year old you can simply eat it alone, in a bowl with a spoon. It's that delicious!
