Beating the heat with the crock pot

This month I will do just about anything to avoid using my oven and since eating out isn't much of interest or an option I've been trying out some crock pot meals. For some reason when I think of using the crock pot my mind jumps to roast with carrots and potatoes, so I had to find some recipes to get me out of that mindset. I wanted to share some of my recent favorites.

Fauxtisserie Chicken from Our Best Bites was true to description and really does taste like what you would get our your local grocery store. I followed the instructions and then added 1 cup of water to the bottom of my crock pot and it turned out perfect. I paired this with a summer salad and it was delicious!


Peach Whiskey Barbecue Chicken from the Pioneer Women. I followed the initial steps using the stove-top but when the instructions say to put it in the oven I put it on the crock pot for 2-3 hours and the chicken was fall off the bone delicious!



Pepperoncini Beef Sandwich from Our Best Bites is another great one we have been enjoying all summer long. I use 2lbs of stew meat rather than what their instructions call for and it shreds just right. We serve this on toasted ciabatta bread topped with provolone or mozzarella cheese.


Apricot Glazed Pork from Yonder Way Farm. I have also done this same recipe using stew meat and the results are equally tasty in my opinion. Serve this with Hawaiian rolls and your sure to have people coming back for more.

  1. This reminds me... I tried a crock pot recipe recently and read the instructions as 8oz of chicken broth, when it was really 8 cups of chicken broth. Darn it.

    Recipe was a complete fail.

  2. I did a crock pot roast this morning. I just throw it in with red potatoes, carrots, montreal steak seasoning, cream of mushroom, and 1 cup of milk and let it cook all day. It is nice and tender and has a gravy by the end of the day! Thanks for the ideas, not only does it beat the heat, but us working Mommies love coming home to the main dish already prepared!!

  3. I am making this recipe Friday...put 3 to 4 chicken breasts in the crockpot, 1 can rotel, 1 can diced tomatoes, 1 packet taco seasoning. Cook on low 6-8 hours. When it is ready shred the chicken. While you are shredding take corn tortillas and spray them each side, put on cookie sheet in oven on broil, for about 4 minutes each side. (watch the tortillas) pile the chicken on top of the corn tortilla with shredded lettuce, avocados, cheese, and salsa(or whatever else sounds yummy). I promise this meal is delicious and easy!!
