Birthday Weekend

Saturday I celebrated my 29th Birthday. Little Miss and I made a lemon poppy seed pound cake for breakfast, it was good but not the best. I'm still on the hunt for the best lemon pound cake. Do you know of one?

I got these TOMS for my Birthday gift. I have coveted these since I first saw them last year and was thrilled that they made a comeback this year. Aren't they lovely?

We went to the Houston Galleria and it was C-R-A-Z-Y nuts! Like big mistake to go on a Saturday with two kids without naps. At least we were smart enough to realize that it was more trouble than it was worth and called it quits, picked up take out and headed for Blue Bell country as fast as we could.

This little guy cracks me up with his boyish behaviors and noises.

I thought it would be fun to compare last years Birthday picture with this years.

This morning Little Miss was posing with Nellie for pictures. I thought it was cute because I've never asked her to pose. She was trying to get Nellie to turn her head and look into the camera and this is the best we got.

Speaking of Little Miss, as of this morning she is back to herself again. I enjoyed today more than you could ever imagine. She loved on me all day and was as sweet as can be. Those hard days really really make me thankful for the "normal" days.

I made this for dinner tonight and it was SOOO good and easy. I served it with mashed potatoes and veggies. It is definitely going into my meal rotation. Little Miss isn't big on the texture of chicken and she had three servings of this dish.

Do you have any new recipe discoveries to share? I have to go to the store tomorrow and I would love to try something new this week.

  1. I made crockpot French dip sandwiches and loved them. I used onion poppy ciabatta rolls from wal-mart and used pepper jack slices and jalapenos to add spice. Found recipe on pinterest.

  2. Happy Birthday! I have prayed for you... I remember those really hard days when my girls were little. I was trying to remember how old your little guy is, but it seems that the 7 month mark was always a difficult one.

As for a new recipe... I made a really simple meal this week. BBQ pulled pork sandwiches. I made a simple coleslaw and served with some chips and bottled root beer. Simple, yummy and a little fun. Great for a crowd too. (HEB may still have the pork roasts on sale this week!) Let me know if it sounds like something you would like, and I'll tell you how to make it.

  4. Happy Birthday! There is a pretty nice playscape in the galleria now for kids. You know where the borders used to be? For the most part it is good as long as there are not that many big kids around.
Right now, I am all about cobbler and I have been buying lots of strawberries (I think it's almost time to go strawberry picking here)...so I made this:

  5. So glad you had a great birthday weekend! We tried both of those chicken recipes that I pinned the other day and they were both really good. The buffalo chicken sandwich recipe was a little on the spicy side - Little Bit only wanted the chicken before I put it back in the crockpot with the sauce :) But we made buffalo chicken pizzas later in the week with the leftovers since it makes a lot.

  6. Sounds like you had a lovely weekend! A friend of mine passed along this go-to recipe, and I have to say it is always a hit! I've seen several variations, but this is my favorite. It's easy and has minimal ingredients.

    Italian Beef
1 beef roast (or 4 boneless chicken breasts, both are good!)
1 jar sliced pepperoncini peppers (8oz)
1 envelope of Good Seasoning Italian Dressing dry mix

Put all ingredients into a crock pot and cook on high for 6 hours. Meat will pull apart. Serve over rice or on an Italian sandwich roll.

If you ever give it a try, enjoy!

P.S. Those Toms are my favorite, I hope to get a second pair sometime this spring :)

This recipe is yummy and super easy!! It tastes like Tacos, but using chicken and you can adjust the spice for little ones!

  8. Wow! Thank you all for your comments. I'm so excited to try some of these recipes.
@Muskokangirl- Most TOMS run a little small but these ran REALLY big. I have only bought them online as well. I know they take returns but you have to pay return shipping:(

    1. Another TOMS question...I have been looking at them online and I'm wondering if they have stretched at all now that you've had them for a while...how is the support in them...just wondering being pregnant and all if they will be comfy for me or like wearing a flip flop with no support?? Anything you can share would be helpful!
      Thanks!
      Pam

  9. Some Nordstrom stores sell TOMS. If you have one nearby you could possibly see if they would allow you to exchange it. I got my husband a pair online, but he didn't care for them and returned them to a Nordstom store. It's always worth a shot if you don't want to pay for return shipping!
