Planning Ahead

I don't know about you but we couldn't make it without our big deep freezers around here. I like to get fruits and vegetables when they are in season for many reasons....flavor and price being two of the biggest. There isn't always room or need to consume everything at once so to the freezer it can go and be enjoyed later.

I also can't pass up when a friend calls me over to pick the overflow of produce from her garden. I picked over 20 bell peppers last week and have big plans for them. Around these parts pell peppers can cost anywhere from $1-$2 a piece and we use at least half a pepper a week for various recipes...so you can only guess what I did with them....

Scrubbed them
Washed them
Cored them
Seeded them
Soaked them
Sliced  them
Bagged them
and
Froze them

Because we always saute these peppers it doesn't really matter that they won't be fresh....what matters is that they were a gift and home grown.
If you don't have a garden of your own I encourage you to support your local farmers and head to the Farmers Market to stock up on in season fruits and veggies.

  1. What a wonderful idea! Question, though - why do you soak them / what do you soak them in?
